So I am attempting to start filming my paddling trips (especially with Gauley season around the corner)...

Im looking for a camera. Something that films better than your average household piece. I want it to film at a high production value in the hope to start marketing my own films in the future (I know it is a daydream but what one man can do...)

Any of you out there have any advise? Anything is helpful

I'm looking into the same thing at the moment. I've been seeking advice from a few camera guru's 2 camera's keep coming up. One is the Cannon HV20 and the other is the Sony HDR-HC7.
Both are High Def 1080i so vid quality is great. The question of which to get comes down to your budget and whether you want a hard drive camera or a HDV tape camera. The cannon is slightly better according to a lot of the reviews I've read but the Sony has a slow mo feature that speeds up the cameras FPS and so when slowed down during editing the vid will still be smooth not jumpy.
Basically the Sony is more pricey too but it's like that with all HDD cameras. Hope this has helped. I would also check out if you can get a Waterproof housing for either of them before choosing one.
