From the Wiki:

When you're upside down in your kayak, put your paddle alongside your kayak. Try to put your body as far as possible at the side of your paddle. Make a hip-flick and push your kayak up as high as possible. Then make the paddlestroke and put your bodyweight to the back of your boat. Your bow will go up while your head is still under water. when your boat is at an angle of 45 degrees finish your stroke and your boat will go vertical. End up with your paddle above your head to balance your kayak.
