Here are a few links to look at:

What is your budget for a kayak? If it is not a large concern, look into some higher quality designs, such as Warren Light Craft and the Wilderness Systems/Necky composite designs. You may want to also look at Nigel Dennis kayaks.

Hi

My Budget was about $2500 oz dollars.
Have been recommended a Valley Aquanaut LV but have to have it shipped from NSW AU
so can’t try it out,
I was told it would be more difficult to get to grips with but more rewarding in the long term.

Locally I have been recommended a dagger Cortez or Exodus but was advice that after some time paddling it I would be looking for an upgrade.

May be a better option to buy second hand initialy to gain some experince and buy a new one when I relocate to Scotland, there is a dagger apostle for sale, it is a older design but I have read a review and it seems to be a reasonable kayak.

I would definitely start with a used kayak, so you can decide whether or not you like sea kayaking. If the kayak is old enough, you may be able to get all of the money you spent on it back when you sell it before your move. The only major changes in touring kayaks in the past few years seems to be lighter weight, which won't make a huge difference compared to good hull design. the apostle looks like a good kayak, so I would go ahead and get it. Based on the conversion rates (not including shipping/tax), you could get a Necky Looksha 17 for $1450, or approx. 350 Australian Dollars under your budget. www.rei.com/product/768005
