Whenever I paddle my boat i find that water leaks in through the screw holes, any ideas of what i can use to seal my screws in.

Yes indeed. Your best bet is to undo the screws put a silicone sealant (mastick) round the nut inside the boat lock tight or thread lock on the bolts and do back up! Also the water may be leaking through your deck my friend has covered the seams of his deck with seamgrip a neprene glue which worked well and made his boat drier.
