Since nobody responded to it...I haven't kayaked a lot in Italy, but what I expect is that the rivers in Italy will be dry in summer. I know there is fun creeking in North Italy (just north of Milan) in Val Sesia in spring. I expect most of these rivers to be dry in summer also.

But search the internet, I am sure the Italian paddlers have some sort of forum, or else, put your question on the Dragorossi forum, Corran might be able to help you out...

Hi,my name is mario and I'm Italaian!
Sorry but during summer there is no water in Italy...too hot, no more snow!
by the way if you are plannig to visit Italy and you also would like to paddle I suggest you to plan it in spring (april, May).
www.canoaclubnovara.it It's a great website also in english, where you'll be able to look at the archivbe and find the descriptions of a lot of italian rivers!

Generally speaking, in Italy works this way:
winter: sothern Italy (for example Lao, in Calabria)
End autumn, early spring: Central Italy and Liguria
Spring time, early summer, autumn: alpine rivers in Piemonte (i.e. Sesia) and Sudtirol/Trentino (i.e. Noce)
Summer: Aosta Valley and Sud Tirol.
