depends a lot on your boat and your taste of course. one site that really offers a lot for this, even though they don't tell you exactly how to do it:
kayakoutfitting.com/mainpage.php

I like lots of padding in the knee/thigh brace area, helps for long sessions when you want to be really tight in your boat, but not in pain. If your boat feels unresponsive, try padding your seat up, in most dagger playboats I like 1-2" of padding on the seat, little harder to roll, but feels much more responsive.

your boat looks like its pretty well outfitted..just make sure your feet have some mini cell foam or foot bag so your legs have good contact in the thigh locks..make sure your out fitting is snug but not to tight otherwise your legs and feet will tend to fall asleep..hope that helps

In terms of the ratchet thing, riots thigh braces are like that. I think there great, responsive and comfortable. There also easier to get out thatn regular thigh braces because you dont really need to slide back, just up.
