\"stable\" comes in many forms. It really depends what you need, and in this case what specifically is unstable about your current boat.

For example, a designer can make a boat that is super flat, very side, and it is very stable, initially, but kind of crappy when on edge, so most boats have a nice flatish spot under the seat for some initial stability then get a little smoother on the side so the boat can be edged up easily (sometimes there are flat spot there for stability too)

Also, a larger volume boat might be more stable because the cross currents don't wash over the deck and grab the boat.

It would be really helpful to know what is unstable about your current boat so we can help you better.

My initial response for someone your size is the Critical Mass, which is super stable. but it might be too much of a creek boat for what you want.

The unstable part is actually on a cross current that sweeps across the bow of the boat. I think the only problem might be is that i am sitting to far in the water.

in that case, something like the Pintail XL might work out for you. Or even a GT.
My friend is about the same size as you and was paddling a Riot Turbo and essentially sinking it. Made for some difficult paddling. We put him in a DragoRossi Pintail XL and he is doing fine. Still has some playboat characteristics to it for him, but he doesn't get auto endered or bow stalled by accident anymore.

but, if you want to prevent all water from washing over you bow or stern you'll need to get something based on a creekboat type of volume
